Chocolate fudge cake for the ones you love

Chocolate fudge cake gets to the heart (and stomach!) of this loved up month of romance, and our foodie writer, Georgia Gerardis, on the Greek island of Rhodes, whipped up this masterpiece in no time at all. In the midst of going through a sudden and deeply personal loss, Georgia still found time to answer our emails and carry on her work. We’re all thinking of you, Georgia, and send our love to you. Taste for Travel dedicates this delicious cake to those we hold dear.  February is also a month where many express appreciation to their loved ones, in romantic terms and other ways. I remember my daughters, when they were in primary school, bringing home heart-filled cards for Valentine’s Day.

Ingredients:

For cake:
180g self-rising flour
2 heaped tbsp cocoa powder
1 tsp soda
160g caster sugar
150 ml sunflower oil
150 ml milk
2 medium size beaten eggs
2 tbsp honey or golden syrup

For icing:

80g soft butter
180g icing sugar
Drop of vanilla essence

Preheat oven to 180C

Add all the cake ingredients in a large bowl and mix with a whisk very well.  Divide the mixture in half. (Don’t let the watery batter worry you. It will keep your cake nice and moist) Pour the mixture in a well-greased round baking dish (18 cm) or a heart shaped one (if you have) and bake for 30 min. Let it cool before removing and place the cake on a cooling rack for a few min.  Repeat with the remaining mixture. While your second cake is baking, start making your icing. Beat the butter very well until it becomes nice and fluffy. Add the icing sugar (little at a time so it doesn’t fly all over the place), cocoa and vanilla essence.

When both cakes are cool, spread some icing on one cake and place the other one on top. Cover the whole cake with the remaining icing. As for décor you can use a real rose or fake one instead.  For a nice contrast you can make a white chocolate ganache.  Just let your romantic side guide you. Preparation time: 10 min and cooking time: 30 min per cake. Too easy!
